SALMON WITH BLACK BEAN SALSA

1 lb Salmon fillets
Salt and Pepper to taste
1 cup Black beans, drained
3/4 cup Tomato, chopped
1/4 cup Red Onion, chopped
1/2 cup Green pepper, chopped

1/4 cup Fresh cilantro, chopped
1 Jalapeno pepper, seeded and minced
1/2 tsp Garlic, minced
1/4 cup Balsamic vinegar
2 Tbs Fresh Lemon juice
1 Lime, sliced

SALMON: Sprinkle fillets with salt and pepper and grill in a large, coated skillet (or grill) for about 6 minutes a side or until the fish flakes with a fork.

SALSA: In mixing bowl, combine the beans, peppers, jalapeno, tomatoes, onions, and cilantro. In small mixing bowl, whisk together the vinegar, lemon juice, and garlic. Pour over the bean and pepper mixture and toss.

Serve the fish over the bean salsa. Garnish with lime.
