DIJON CHICKEN DINNER

1 Tbs Extra virgin olive oil
1/4 Cup Seasoned flour
3 Chicken breasts (trimmed)
4 Cloves Garlic, finely chopped
1 Cup Unsalted chicken broth

1/2 Small Onion, finely chopped
1/4 Cup Dijon mustard
1 Tbs Honey
1 tsp Dried thyme, crumbled

In a large skillet, heat oil. Lightly coat chicken breasts in seasoned flour. Quickly brown the chicken on both sides. Remove from skillet and reduce heat.

Add garlic to skillet and sautè for about 2 minutes. Add chicken broth, onion, dijon, honey, and thyme to skillet. Bring to simmer over medium-low heat. Add chicken. Cover and poach until chicken is cooked through. (About 20 minutes)

Transfer chicken to plates. Increase heat and boil liquid until reduced to a sauce consistency. (About 2 minutes) Pour sauce over chicken and serve.
