FUDGE PUDDING CAKE

1 Cup White flour
2 tsp Baking powder
1/4 tsp Salt
3/4 Cup White sugar
2 Tbs Cocoa powder
2 tsp Vanilla extract

2 Tbs Canola oil
1/2 Cup 1% or skim milk
1 Cup Brown sugar, packed
1/4 Cup Cocoa powder
1 3/4 Cups Hot water

Preheat oven to 350 degrees
In mixing bowl, combine flour, baking powder, salt, white sugar, 2 Tbs cocoa powder, and vanilla extract. Slowly stir in canola oil and milk and mix until smooth.

Pour batter into 8 x8" ungreased baking pan. Sprinkle brown sugar evenly over the top. Repeat with the 1/4 cup of cocoa powder. Gently pour hot water over entire batter, but do not stir! Bake 40-45 minutes, until toothpick inserted into center comes out clean. (Cake will be on top, pudding on the bottom)

Let stand for 5 minutes. Cut cake into 9 pieces and spoon into dessert dishes, then spoon pudding from bottom of the pan over the top. Serve warm.
