SPICY TURKEY BURRITOS WITH SALSA

2 Tbs Olive oil
4 Medium Plum tomatoes, seeded and diced
1/2 Medium Jalapeño pepper, seeded and diced
1 Cup Fresh cilantro
1/4 Cup Lime juice
1 Red Onion, sliced

2 Bell peppers, seeded and sliced
1 lb Diced leftover turkey meat
1 Tbs Ground cumin seed
4 Flour tortillas (Burrito sized)
Salt and pepper to taste

Preheat oven to 300 degrees.

For Salsa:
In a mixing bowl, combine and stir; 1 tablespoon of the olive oil, tomatoes, jalapeño, 1/4 cup of the cilantro, and lime juice. Season with salt and pepper.

For Burritos:
In a large nonstick skillet, heat remaining olive oil over medium-high heat. Add red onion and bell peppers and sauté until tender. (About 12 minutes) Add turkey, salsa mixture and cumin. Stir until heated through.

Then, stir in (optional) jack cheese and remaining cilantro. Season with salt and pepper. Remove from heat and cover.

Heat 1 tortilla at a time in dry skillet or over open flame until warm and soft. (About 30 seconds per side) Spoon a quarter of the turkey mixture along the center of the tortilla. Fold sides and roll tortilla to enclose the filling. Place burriton seam side down on baking sheet. Place in oven to keep warm. Repeat with other tortillas. Serve warm.
