TURKISH SPINACH WITH RICE
1 Package Fresh spinach
4 Tbs Olive oil
1 Med Onion, chopped
1/2 Tbs Tomato paste
3 Tbs Uncooked rice
1/2 tsp Salt
1/2 Cup Water
1 Clove Garlic, minced
1 Cup Plain yogurt
Wash spinach and chop to salad size. In a large skillet, cook onion in oil until translucent. Add spinach and cook 3-4 minutes. Add tomato paste, rice, salt and water.
Cook on medium high heat until boiling. Reduce heat and cover. Continue cooking 10-15 minutes(until rice is done).
SAUCE: Mince garlic with one cup of plain yogurt.
Eat hot or cold with one dollop of yogurt sauce.
