SPICY TOFU SCRAMBLER

2 Pounds Firm tofu, rinsed
1/4 Cup Low-sodium soy sauce
1 Tbs Thai peanut sauce
1 tsp Hot pepper sauce
1 tsp Salt
1/2 tsp Ground cumin seed
1/2 tsp Turmeric

1 tsp Black pepper
2 tsp Extra virgin olive oil
2 Green onions, chopped
2 Cloves Garlic, minced
1 Cup Broccoli florets
1 Cup Cauliflower florets
1 Medium Red pepper, chopped

In large mixing bowl, crumble tofu with fork. Stir in soy sauce, peanut sauce, hot pepper sauce, salt, cumin, turmeric and black pepper. In large skillet, heat olive oil. Add onions and garlic, and sauté for 2 minutes or until onions are tender. Add broccoli, cauliflower, and red pepper, and sauté for 2 minutes. Add tofu. Cook 5 minutes or until tofu begins to brown and broccoli and cauliflower are tender. Remove from heat; serve hot.
