CINNAMON RAISIN OATMEAL BARS

1/2 cup Butter
2/3 cup Unsweetened apple sauce
3/4 cup Splenda for baking
4 1/2 Eggs or egg substitute
1 tsp Vanilla
1 1/4 cups Buckwheat flour
1 tsp Salt

1 tsp Baking soda
2 cups Oats (Uncooked Oatmeal)
1 Tbs Butter buds
1 Tbs Cinnamon
1/2 cup Chopped walnuts and almonds
1/2 cup Raisins
1/4 cup Flax seed (optional)

Preheat oven to 350

In a large mixing bowl, cream butter, unsweetened apple sauce, splenda, eggs, and vanilla. In a separate bowl, mix the buckwheat flour, salt, baking soda, oats, butter buds, cinnamon, almonds, walnuts, dried apples, and flax seed. Add dry ingredients to batter.

Spray 9 x 13 inch pan with non-stick spray and pour in batter. Bake 30 minutes or until the edges are golden and the middle is solid.
