SESAME PORK STIR FRY

2/3 Cup Brown rice
2 Tbs Low sodium soy sauce
1 tsp Corn starch
1 Tbs Canola oil
1 lb Pork tenderloin, cut into small cubes
1 Tbs Sesame oil
1/4 tsp Red pepper flakes

1 Tbs Rice vinegar
1 Cup Pea pods or snow peas
1 Med Red bell pepper, cut into thin strips
1 Med Onion, chopped
2 Cloves Garlic, crushed
1 Cup Bean sprouts

Cook brown rice. Combine soy sauce and cornstarch; stir and set aside.

In a large skillet or wok, heat canola oil. Over medium-high heat, stir fry pork for 2-3 minutes or until cooked through. Sprinkle pork with sesame oil, red pepper flakes, and rice vinegar. Add pea pods, red bell pepper, onion, and garlic. Stir fry 3 minutes. Add bean sprouts, and stir fry another 2 minutes. Stir in soy sauce mixture and cook another minute.

Remove from heat and serve over rice.
