DEVILED TOFU
1 lb Firm tofu
2 Tbs Dijon mustard
1/8 tsp Garlic powder
1/4 tsp Ground cumin seed
1/4 tsp Paprika
1/2 Cup Celery, minced
1/2 Cup Carrots, shredded
1/4 Cup Scallions, minced
3 Tbs Honey
Set tofu on paper towel on a large plate. Put another piece of paper towel on top, and place a weight over that to drain tofu. Let sit for 15 minutes.
In large bowl, mix tofu, mustard, and spices with a wooden spoon until tofu is uniformly crumbled and spices are well blended. Stir in vegetables and 2 Tbs honey. Add more honey if needed to make a smooth mixture.
Serve as appetizer on crackers or in pita pockets.
