Breakfast Tortillas

  • ½ Tbs Olive oil
  • 3 Small Corn tortillas, cut into strips
  • 4 Eggs, beaten
  • 1 Green chili, diced*
  • 1 oz Tomatillo salsa
  • 3 Tbs Cilantro
  • Salt and pepper to taste
  • 1 Small Roma tomato, diced
  • Sour cream to garnish
  1. Heat oil in large skillet.
  2. Add tortilla strips and cook until softened. Add the eggs, green chili, salsa and cilantro.
  3. Cook for about five minutes until set.
  4. Season with salt and pepper.
  5. Top with diced tomatoes and a dollop of sour cream. Enjoy!
