Mimi Sheraton loves bialys - those Jewish crusty rolls
with the toasted onion center. She picks one up every morning from
her local Manhattan bakery. Sheraton set out to visit the Polish
town of Bialystock to find the people who invented this magical
bread. But the thriving town of 50,000 didn't survive the Nazis.
When she arrived, only five Jews were left. In this hour of To
the Best of Our Knowledge, stories about bread.
SEGMENT 1:
Brother Peter Reinhart has devoted his entire
life to nurturing matters of the soul. His Spiritual path has
led me to baking bread. For over 15 years he has been the leader
of the American Artisanal Bread movement. He told Anne Strainchamps
what it is all about.
SEGMENT 2:
Reporter Charles Monroe-Kane ventures off
to one of the last surviving grist mills in the US. He learns
about how water power is used to grind wheat into flour. He also
learns something about himself as well. Also, Arlo Guthrie
reading from the classic parable, The Little Red Hen. And, Carolyn
Wyman tells Steve Paulson about the history of Wonder Bread.
So, it is the greatest thing since sliced bread?
SEGMENT 3:
For most of recorded history, bread has been the
essential food of society. Darra Goldstein, editor of Gastronomica
magazine, tell Jim Fleming you can't overstate the significance
of bread in human history. Also, Mimi Sheraton, a travel
writer, sets out to the Polish town of Bialystock to find the
origins of her favorite bread from childhood, the Jewish roll,
the bialy. But the thriving town of 50,000 did not survive the
Nazis. When Sheraton arrived only four Jews were left.
