ROAST BEEF PITAS
½ Pound Deli roast beef, sliced into strips
2 Cups Shredded romaine lettuce
½ Cup Matchstick carrots
1 Cup Thinly sliced cucumber
½ Cup Sliced red onion
¼ Cup Crumbled feta cheese
4 Whole-wheat pita pockets
Dressing:
2 Tbs Fat-free mayonnaise
2 Tbs Skim milk
1 Tbs Cider vinegar
Combine the roast beef, lettuce, carrots, cucumber, onion and feta in a large bowl and toss gently. Slice each pita pocket and stuff with the beef and lettuce filling.
In a separate bowl; whisk the mayonnaise, milk and vinegar. Drizzle the dressing over each pita and serve!
