GUILT-FREE FRENCH ONION DIP
1-2 Tbs Olive oil
1 Cup Diced onions
1-2 Cloves Garlic, diced
1 Large Container Plain, nonfat, Greek yogurt
1-2 Pinches Kosher salt
½ tsp Ground white pepper
Heat oil to medium or medium high in low wide frying pan. Add onions with 1-2 pinches of salt. Stirring occasionally, caramelize onions (most of them should be brown but not black).
During the final minute of cooking, stir in the garlic. Turn heat off and let cool to room temperature (About 10 minutes). Once cool, combine onion and garlic mixture with yogurt, pepper and add a pinch or two more of salt.
Mix thoroughly and refrigerate for several hours, preferably overnight. Stir again in the morning, this is when the rich brown color usually appears at its best. Keep refrigerated until ready to serve then mix again.
